Kacchi biryani is the dish that Dhaka is most unapologetically proud of. The slow-cooked, dum-style preparation — where raw marinated mutton cooks simultaneously with the rice in a sealed pot — is technically demanding, and the gap between a good kacchi and a great one is significant.
